Taylor's Beet Salad


I recently returned from a retreat for the traumatically bereaved, in Sedona, AZ.  If you have followed the story of Yummvees, you may know that we were built as a way to honor our son, John, who passed away at birth.  I had the distinct honor to meet and spend time with Sarah....Taylor's Mom.  Taylor also, passed away at birth.

We were tasked to present a "gift" of our choosing to our partners for this particular day.  My gift, is food.  This recipe is about as pure and simple as it gets.  Just like the love, that Sarah and I have for our children who are no longer are with us.  It is raw, simple and beautiful.  Every time Yummvees offers this meal, 100% of the proceeds will be donated to a cause/charity/family that Taylors Mom and Dad choose.  Our way, of remembering a life taken, way too soon.  

Sarah, I adore you, the time that we spent, and you are an amazing woman.  Our children are hopefully, somewhere together.  xoxo.

This "salad" is a combination of cooked and raw ingredients.  Lemon infused raw kale, with roasted beets, baked tofu and brown rice piled high on top of it, drizzled with a beautifully simple tahini dressing.  A huge, filling, and extremely "good for you" meal (you may find this is more like 2 meals depending on your appetite).  And best of represents the love for a child.  

Ingredients:  Organic tofu, beets, organic kale, organic brown rice, tahini, garlic, lemon juice, nutritional yeast, pepper, Himalayan pink salt.  Contains:  Soy.
